Brewpub Line Cook:

Job Overview

It is the responsibility of the Line Cook to work with the Kitchen Manager and kitchen staff to maintain the four core principles of Denali Brewing: Safety, Quality, Efficiency and Ownership. The Line Cooks are expected to exercise good judgment and decision making to ensure these principles are maintained.

Qualifications:

- Prior kitchen experience.
- Extremely high level of attention to detail.
- Ability to think and act creatively, while conforming to existing standard operating procedures and DEC regulations.
- Must be in good physical condition.
- Must have a current Alaska Food Handlers card.
- Ability to sit/stand/bend/walk and maintain manual dexterity for duration of work period.
- Must be able to work independently and be able & willing to work morning, midday, nights and/or weekend shifts.
- Able to lift 55 lbs. and move at least 165 lbs.
- Be able to work in extreme hot and cold environments.
- Have a flexible schedule and be a team player.

Common Duties will include:

- Maintain appearance, cleanliness and general ambiance in accordance with the culture of Denali Brewpub.
- Be able to execute consistent plates of food.
- High attention to food safety, taking temps and date checking all product.
- Alert management to facilitate repairs.
- Navigate adverse situations such as power outages and water outages.
- Develop a strong knowledge of prep recipes and procedures.
- Create a culture of safety, quality, efficiency and ownership.
- Supervise hot and cold line set up and ensure proper stocking and back up prep.
- Ensure opening and closing hot and cold line side work is completed.
- Quality control of food delivered to guests, including appearance and portion control.
- Communicate line needs by maintaining an accurate prep list.
- Maintain daily and weekly line cleaning program.
- Coordinate with the Kitchen Manager on all prep needs.
- Ensure all food storage spaces are clean and orderly according to FIFO.
- Communicate clearly and respectfully.
- Maintain the prep list with Kitchen Manager.
- This position requires flexibility and the ability to work hours as needed.

Pay Range:
$17-20 per hour DOE
60% off meals on days worked.
Employee prices on our products.
50% off merchandise.
